“It’s Still Summertime” Salad

The temperature has made a dramatic turn for cooler weather over the last few days, and truthfully, I’m loving it. I am grateful for air conditioning when it is hot outside, but I much prefer fresh air moving in the windows and through the house. I keep hearing people say things like, “Summer sure went by fast,” and “It’ll be Christmas before you know it!” Okay, it was ME who said that last frightening sentence. But still, summer is NOT yet over!

In fact, we are just getting to the good part of summer, when the garden is really producing food (especially tomatoes!) and we are able to go outdoors together and enjoy ourselves without sweating through our clothing.

That’s why I decided to call this recipe “It’s Still Summertime” Salad. We enjoyed it for dinner just last week, with a hunk of garlic bread to go with it.

This salad’s ingredients are:

  • frilly red leaf lettuce (but whatever you have in the garden or can pick up at the farmer’s market will do)
  • English cucumber
  • celery
  • crispy bacon, crumbled
  • shredded, roasted chicken
  • shredded sharp cheddar cheese
  • wedges of various heirloom tomatoes (shown here are “Garden Peach” and “Green Zebra”)

Layer all of the salad ingredients and drizzle with your favourite homemade or bottled dressing. We tried PC Avocado, Lime and Jalapeno Dressing this time around.
